How does one remove dry latex paint from leather ?

Your best bet would be to ask a local tack shop (where they sell and repair saddles). They are very knowledgeable on cleaning leather and may have a special cleaner to remove the paint (as well as conditioning agents that may help repair any damage that was caused by it).

try denatured alcohol in a inconspicuous spot to make sure it will not remove your dye if it doesn't your good to go that's what I use on my shoes all the time
